When it comes to CGI, Life of Pie was way ahead of its time all the animals in that film were visual effects. The Perfect Storm also had some impressive GCI effects for its time even though it lost to the first Gladiator in the best Visual Effect category at the Academy Awards. When it comes to practical effects The Thing and the first RoboCop movie stand out. Also, when it comes to wire work Crouching, Tiger Hidden Dragon is still my favorite movie that uses it a lot.
