Dark Souls is easy compared to Bloodborne, if that was a problem for you there, it will be a bigger problem with Bloodborne.

Dark Souls isn't actually too hard, being your first souls game makes it harder, but just until you get used to it.

Bloodborne on the other hand is actually hard, it rewards you taking risks (for example once you get hit you can quickly recover some of the lost HP by hitting the enemy back, but you'll end up taking more damage by rushing it until you learn to play a bit better), the game basically doesn't have shields so you'll have to learn to either:

1. Be very patient with your attacks and make good use of the trick weapons mechanic;

2. Know the timing to hit back enemies to keep recovering your lost HP;

3. Learn to dodge roll somewhat properly:

4. or time your gun parries well, to keep progressing

From the Souls games I played (Demon's, Dark, Dark 2, a bit of Dark 3, Nioh and Bloodborne) Bloodborne was definitely the hardest.

If you want to get into the series Dark Souls is a good game to do it, maybe Demon's Souls remake is too, never played it, and the original is harder than the Dark trilogy, but the remake looks way easier than the original.
