Last of Us doesn't even have great stealth. I'll second mentions of The Order and Ryse. Also throw in Forza 7, more like Snoreza 7. Red Dead 2 as well, sometimes less is more. Watch Dogs.

People don't know what they're talking about when it comes to tlou. It has some of the most satisfying gameplay of any game. People must have played the game on easy difficulties. The game truly shines on hard/grounded mode. The sequel improves on the melee and gameplay vastly, and has the best shooting, fighting visceral action , physics, gore and enemy AI reaction of any game I have seen.

Or maybe people just have a different opinion to you.

I thought TLOU was a good game myself; certainly no masterpiece, but a solid 8/10. I can easily see why a lot of people might find it a chore though. There's a lot to nitpick in terms of its AI and some of the more remedial gameplay sections like the rafts and stuff, and while these didn't bother me too much I imagine others might find them harder to forgive.

It all depends on what qualities and types of gameplay one values, or by contrast finds horrible.
