Looking at it strictly from a performance standpoint isn't the full story.  Psychologically, people like new things.  We see this with cell phones where people get an upgraded model that they don't really need, but it works with gamers too.  After all, I bought a New 3DS which I really didn't need all that badly...  There's also a big signal boost that comes with releasing a new model.  All the websites and such start talking about it, as will the more avid fans on social media.  Releasing a new model comes with at least a few million dollars of free marketing for Nintendo.  

Just personally I'm feeling that "I want a shiny new toy" itch, that makes me want to buy a Series X even though I know I'm probably not going to use it all that much.  If Nintendo released a pro model though, I might scratch the itch that way.
