Definitely depends on the screen and how far you're away from it but when looking at my TV, 1080p is definitely the minimum.
The lack of resolution is very noticeable when looking at 900p games of which the X1 had many before Xbox One X released. 720p games on the other hand look like utter crap.
720p videos however, usually age better.
