Another factor is they may not have wanted it to be seen as a kind of "Chibi" version like FF15 Pocket Edition. Maybe they just wanted to bring the game over as intact as technically possible instead of making major changes to its design.
Personally, I like it how it is, I wouldn't have wanted, say, a cel-shaded version or anything like that.
