It's just a matter of personal preference. For me every single game in the series (and Bloodborne) are among the best games I've ever played, but they're not for everyone. Fortunately, you don't need to like every game other people find great, so if you don't care for Dark Souls that's perfectly fine. There are games that a lot of people like which I never found especially good either. That's just the way opinions and tastes work.
