So, you can use just a headset, or talk right into the system like the Vita? Either or is fine. Both would be preferred. That's a good thing for sure. The voice chat thing is easily my #1 problem with the system. But this is just with Fortnite at the moment? It's a promising step at least. I'm not big multiplayer guy, but I do play multi a bit more in recent years. It's not just a nice feature to have, but is almost required for some games.

a phone headset which has a mic in the same 3.5mm jack will work perfectly into the switches audio jack or if you have a PC usb headset you can put that into the dock and chat away, I've used 2 different PC headsets with no issue. Actually if you use a OTG USB-C adapter you can use a full form USB headset directly into the handheld Switch.
