If the Switch was on the same level as the other two systems, I would agree, but it isn't. 
And this game isn't like your yearly sports game (FIFA, NBA), average FPS (Doom, Wolfenstein), or remaster/remake/port from previous systems (Crash, Skyrim) that don't take much effort or require much resources to develop. MHW is the first true, original, HD entry of one of Capcom's most important franchises that was built from the ground up to take full advantage of the PS4 and Xbox One hardware. So, to say "just port it over to Switch" is not as simple as the other games I mentioned above, there would be a lot more sacrifices to be made and it got to the point where Capcom obviously thought the game's quality would have taken too much of a hit and that it wasn't worth it.

Like you said, and I agree, it's not the ideal solution. But, it's the best one available in this instance to satisfy all parties involved.
