I think Dark Souls III is the easier game, though a lot of that depends on what kind of action games you've been playing in the past. Bloodborne rewards highly offensive playstyles, while Dark Souls III places a bit more emphasis on defense, though aggressive plays still work well there as well. Bloodborne does do a bit better job at easing the player into the game at the start, so that might be a good reason to go with that first.
