And looking at the Switch version, I do see the average texture resolution is higher than on Doom.  Now I haven't played Doom docked yet so maybe I am missing something, but this looks considerably more clean and crisp than the docked gameplay I have seen of Doom.  But it's important to realize both are also quite different, as noted by DF.  Wolfenstein puts a lot of emphasis on polygonal and textural complexity with more elaborate environemnts while doom puts heavy emphasis on its post processing effects pipeline.  So Doom will always look softer than Wolfenstein 2 when running on the same hardware.

Yeah I've played through Doom docked and the textures here in Wolf II definitely look better.
