UC4 and Horizon make plenty of sacrifices of their own. 

Games on all consoles make sacrifices to achieve certain performance goals.

But Mario Odyssey is pushing it to another level than most other 60 fps titles. But people are less critical of Switch because its inferior specs.

Frankly, a game like Mario Odyssey shows better specs could really make that game a lot more polished. But its still an achievment as is.

Well, at the end of the day, it's handheld hardware, so naturally it has to make more sacrifices than games on, say, PS4. Of course software gets judged by the standards of the hardware running it, that's why PS4/Xbone games don't get criticized for not hitting 4k/60fps in AAA titles.
