In fairness to the writers, you can't really have a sequel trilogy if there is nothing to fight (ie: the "balance" of the Force/good times/warm and fuzzies/sunshiney days whatever you want to call it going out of sync).

So to some degree a sequel trilogy by default was always going to in some ways invalidate the original trilogy, because all evil should've stopped at that point and the galaxy should've lived happily ever after, which means this trilogy would be about ... Rey helping Luke to decorate his house?

First, yes. There is a reason George Lucas eventually gave up plans for sequels, because he knew the story was finished and it didn't make any sense to go on. But secondly...

If they had to go on, there were a million better ways to do so. I'm sure Lucas himself probably proposed a direction that made more sense, before Disney just ditched it in favor of a "entire universe goes back 30 years in time" approach. I'm no writer or some crazy storyteller to begin to list the million better stories they could have gone with, but I can tell you if one thing's for sure, it's that the Empire taking over again and Han Solo becoming Han Solo again and Luke giving up on everything and everything going to shit in 30 years was not the only way to continue. In fact, the prequel trilogy is a great example of one (of many) different direction Star Wars could be taken in, without sacrificing its integrity at all - I don't care what purists might say on it, the prequels were absolutely fine artistically and actually added a lot to the universe and felt unique without losing identity. They had bad writing, directing and acting, yes, but that doesn't mean they didn't have good ideas.

Actually from what I've read a good chunk of what is in Episode VII is basically off of Lucas' treatment (ie: Han Solo going back to being a smuggler).

Lucas didn't give up his plans either, he wrote a full treatment for Episode VII, which Micahel Arndt did a draft around. Disney decided to give the reigns to JJ Abrams but a lot of that treatment is apparently still part of The Force Awakens.
