Why wouldn't they? It's a new game, its got all the features and DLC, sans a level editor.

It was originally released a year and five months ago, so it's hardly new. It's not very old, but it's definitely not new either. Also, it's 30€ on Steam, so 60 sounds quite high on Switch. Perhaps 60 isn't unreasonable, but there's definitely enough reasons for it to not cost that much.
