If you watch the digital foundry video as well, all of the issues with framerate they said were based on asset streaming, the speed of the memory doesn't change with the clock change from docked/undocked so the streaming issue will be the same for both modes, meaning it could well be 720p in both modes since the GPU isn't the thing which is kicking up and causing the dips in the footage we're looking at here.

Keep in mind that Minecraft is 3rd party game and that even Minecraft devs said that game could easily run at higher resolution than 720p in docked mode. I dont see that Nintendo would run their game in same resolution in handheld and home console mode, when fact is that currently only their Switch game that isn't 1080p is Zelda BotW while they dont have not single 720p game.

They said it looks like frame rate issues (dips to 57 only) are based on data streaming and that in final game we could see that GPU could eventually support slightly higher resolution.

It seems like Nintendo is working first on handheld mode and later just bump resolution for docked mode. In other words, this E3 demo is probably portable mode that currently runs same on docked mode also, we already saw same thing with ARMS and Splatoon2.

Yeah and the thing everyone has to remember with this, the game isn't out for another 4-5 months, if there is things like asset streaming issues that could be because the code is all over the place right now and the assets are not arranged in a method which is fully optimised for the Switch to work with, by the time the code for it all is cleaned up and everything is perfectly in place and streamlined for launch then we could undoubtedly see things getting better by launch :) it's months away.
