How Much Would You Pay For a Netflix-Style Gaming Service?

This question is impossible to answer without knowing the games that would be on the service.

If every game that released for XB1 or PS4 was included, I would probably pay $40 per month. But, if it's just going to be random deal and an occasional 3 year old AAA game, I doubt I would pay more than $5 per month, and I would probably not subscribe for long.
