I believe part of this has to do with Gunn's solo writing and directing as well when the original had  a co-writer for the script. The story revolving around the celestial Ego and the character deserved better treatment to make it more inspiring. Not to mention the overly reliant CGI turning non-judicious at several instances during the ultimate face-off between the central characters.

I can definitely agree that Ego didnt get enough development, screen time etc

But to be honest, you could say that about 90% of the villians in the MCU. They are all pretty forgetable and useless characters. 

I saw Wonder Woman and oh boy the villain does leave a lasting impression on the viewers although the act needed more refining to it. It was one of the best DC comics origin movies since Batman Begins. MCU can take a thing or two from this.
