As a manga easily One Piece. Nothing touches it in its genre imo
As an anime, I have a soft spot for the original Naruto. First anime I got hooked on and didn't have the emotional BS of Shippuuden. Bleach was amazing in its first 60 episodes but just went downhill from there unfortunately.
I also agree with the Bleach thing. Kubo really made a mess of a lot of things and in the end seemed really disinterested with his work. It really soured the experience and like most say it ended after Hueco Mundo but went downhill way before after the first major arc. The first major arc had so much going (despite some inconsistencies) but the attention for detail after that by Kubo was glaringly obvious
