They vary a lot. Most are 1 or 2 puzzle long, with an extra puzzle for a treasure chest. There is one I remember that was practically a dungeon just in depth, puzzles, enemies and treasures, but is still very short. There are some that are actually in the overworld! Those are really cool, but also really hard.

They are a pretty good replacement of linear or predictable dungeons (go in, need item, get item, solve everything with item), but I have played over 40 Shrines now, and I'm getting a little sick of it. They feel never ending! Although this is something I can easily fix by myself: change my focus in the game from Shrines to something else (story, exploration, sidequests)... but it ain't easy. If I see a Shrine, I have to complete it.
