How are 2 Joycons being $79.99 overpriced when 2 PS Move controllers are $99.99!?

A feature that is included on a car by default is called a 'standard' feature. Dictionary.com defines standard as "an object that is regarded as the usual or most common size or form of its kind", the Joycons are included with the system itself and will be far and away the most commonly used controller for the system.

 

They are the standard controller for the Switch.

That doesn't mean they are the only Standard. And just becase they are expensive doesn't make them overpriced if they are expensive to make in the first place, they are essentially 2 technically advance Wii remotes which would cost the same price.
