It's not even a live presentation or something, it was a pre recorded video of Aonuma, and Bill Trinen playing the game. They had a 100% control on what people could have seen of the Switch.
The only reason I can think of, is that Zelda switch is exactly the same as the WiiU version, or at least not different enough to be able to differentiate them in a youtube video. So they didn't show the switch version, in fear of people thinking that the Switch is not more powerful than a WiiU (which is almost true)
