Now that Nintendo has a set date for their full unveil, likely Nintendo is putting a gag order on any further showings/large scale mentions of NS software until then. 

If Nintendo wanted things to be kept quiet that much and this was actually planned as a NS game as well, then surely they would have wanted Capcom to not announce this either yet, no?

Capcom may have wanted to announce something now because of pressure from shareholders since it appears they are having some financial problems. So if they have an earnings report coming up, being able to say "hey we got another Monster Hunter game that's probably good for 1-3 million in sales coming this fiscal year" helps settle some nerves. They can keep the NS version under wraps until Jan.12, no big deal.
