Zelda influenced adventure games, and it was also the premice of open world games.

But RPGs? No, absolutely not, Enix and Square were always 10 steps ahead of anything Nintendo made regarding RPG or RPG elements in games (in the 80's and 90's)

As for today's RPGs, yeah the line between action/aventure and RPG is kind of blurring, because a lot of modern RPGs took elements from action adventure games (The Witcher, Fable, Mass Effect)
And on the other hand, a lot of Action and/or adventure games (A LOT) are taking elements from RPGs (stats, upgrading characters, crafting etc etc

Not really development didn't take that long in those days unlike now, Zelda 2 was out  11 months after the first game for example, DQ came out 6 or so months after Zelda released, Zelda had a big impact on any adventure like game including RPGs.

Metroid was inspired by Zelda and came out the same year about 7 months later.
