It's actually a fairly "Nintendo-ey" idea. Detachable controller wings will let them make all types of different controls, they even come packaged with different games ... which is another very "Nintendo-ey" concept. 

What can be made on it without the controls that cant be made on it with the controls?

You can carry around the NX will two detachable controllers to play with family/friends (Nintendo's golden prinicipal) anywhere so that be one. 

Being able to bundle different games with cheap plastic controllers is also right up Nintendo's ally. 

This sooooo Nintendo it stings. You can make a Mario game with a trackball controller, a Pokemon Snap game like above, etc. etc. etc. Individual games could have unique control schemes.
