Regarding GTA V and Arkham City, those games look very good on PS3/360, but a cityscape of rectangular buildings is generally easier to render than rolling organic landscapes packed with dynamic vegetation.

Wii U has 1GB of RAM available for games, but PS3 and 360 have less than 500MB. As such, Breath of Wild likely wouldn't fit into the working memory of PS3 or 360, it would have to be cut down until it fit, which would require downgrades.

GTA V has both a cityscape and has a beautiful countryside with impressive terrain and weather systems in place. But it does have less vegetation than BOTW on PS3. Still though, it renders many NPC's and vehicles at once, and they are complex models.

Oh I absolutely agree that GTA V on PS3/360 is a astounding piece of graphics tech, and even as someone who didn't really enjoy the game itself, I am thoroughly impressed by what its technicians and engineers were able to accomplish on circa 2005/2006 hardware.

I know it can seem like I'm downplaying the graphics of the PS3/360 games I'm addressing, but that's only because I'm comparing them directly to a game on stronger hardware. Taken on their own terms, pretty much all the games we've discussed look great in my opinion.
