My take:

-For the first time since OoT, I fear Ganon (considering the stats, imagine the health the last boss it's going to have - guardians have like 500, maybe Ganon 2,000?)
-You have to explore to discover the story and gather better equipment to save Zelda and Hyrule (Castle) (in this context, the only 4 big dungeons makes sense as we have since the beggining our main objective, no twist in the middle like every game after ALTTP)
-You will be able to get a good equipment without exploring all the map, but for those who wanna explore every inch, the reward will be very very powerful gear/equipment
-The arena to battle Ganon will be the entire Hyrule Field. Similar to those Guardians battles.

Well, if you wanted to beat the game. I've yet to see someone 1-2 hours in the game actually beat lavos without new game plus. BoTW has been confirmed to be completable even with your lowly stats.

Not exactly. You can go to Ganon with low stats, but that doesn't mean you can beat him.
