Except for Majora's, which is a totally different situation, they always use new engines/assets for the game. If NX is about as powerful as an XB1 as some rumors say, I think reusing this engine would hold the game's potential, so they wouldn't do it.

If they don't reuse the Zelda U assets and engine, they are going to need another four-five years to release a new Zelda (or even more, given that the tech allows for bigger and more complex worlds and mechanics). That would be really worrying, specially with all the delays Nintendo takes with Zelda. Fans would not like having only two Zelda games per decade, even if they try to fill the space with spinoffs and remakes.





You know it deserves the GOTY.
