Skipping the Wii U would be breaking both an implicit and explicit promise to current owners that the system would be getting its own Zelda game.
That said, if NX is home console, than it should be there too. It is too soon for another Smash or MKart (unless they are remastered too), so Zelda would be the big(gest?) IP in the new console for some years. It is also a hell of a launch title.
