One is prerendered video and the other is running in real time.
In addition to the enhanced character models, the cutscenes use superior shadows, textures, effects and post-processing compared the actual in-game PS3 graphics. Showing a pre-rendered cutscene shows nothing about PS3's graphical capabilities except that it can play HD full motion video.
