That is a hardcore wiimote you've described. I think it's motion controls make up for the lack of buttons you speak of. I wouldn't know where to begin learning to press all those buttons with one hand.
On topic, If I had to choose between a Wii U with or without a gamepad, respectively priced, I would buy the one with it. I have a feeling that Nintendo's next console will be able to support multiple gamepads. That would be so sweet.

It would be like if you broke a Pro controller in 2 and allowed motion controls. In my eyes it would be like how the SNES controller was the evolution of the NES controller. This would be the natural evolution of the Wiimote, which is what should have happened, vs the gamepad. At least that is my opinion.
