I don't think that there's a prominent Western TV show writer who has the credentials. TV and movies have much more urban fantasy and SF than high fantasy, and Zelda is an oddball even by fantasy standards.
There may be some Japanese mangaka or light novel writers with the requisite experience because--unlike the West--Japan actually has a fair bit of high fantasy TV.
Mamare Touno (Writer of Log Horizon) comes to mind as the logical choice. He's not only a damn good light novel writer, but he knows how to handle video game fan communities.
