Hardcore Gamer: Similar to the modern usage of the word "nerd", a hardcore gamer is someone who surrounds themselves in games. They love playing games, they love exploring all the different weird games that are out there, they love talking about games and they love reading about games. They just all around love games.
Mature Games: A mature game is a game that goes beyond being fun and requires something more than blind mesmerism to enjoy fully. Now, this isn't really an inherent quality of a game, it is something that the player bestows onto the game so it isn't really a useful definition. What is thought provoking for one person may be banal for another, so whos to say if a game is or isn't mature?
Those are my personal definitions and both of these terms are not binary, they are more of a sliding scale.
