That image presents two actions during gameplay if it were like that in Zelda U, which it isn't; Riding Epona, and climbing a cliff. That's it, and there'd be an exponencially larger amount of riding Epona then climbing. That's the poster child for sailing on grass. Sail to an island with a cliff, climb the cliff, sail the rest of the way.

No difference in gameplay. Complete difference in aesthetic. You're doing the same thing for the same amount of time. In fact, if Zelda U were actually like that, you'd be doing the "boring" part for longer.

Guess you missed the parts of the demo where there were specific paths leading up rocky mountainsides, facilitating exploration to get to the top. And these and other features are not even remotely close to being as far apart as Wind Waker's islands:
