You are the one saying it... Again, visuals is more than just tech or art style, it's a whole made of color palette, animation, framerate, level design, detail, camera angle, lighting... but mostly talent!

As for the game you quote, nowadays every decent company can mimmic reality & make great realistic visuals... doesn't mean I don't like realistic game, I enjoy quite a few of them, car sims, FPS & others, but I'm not narrow & enjoy as well if not more the likes of Mariokart, Journey, Rayman Legends!!!

You don't eat your favourite dish everyday @ lunch & supper, variety is good for your belly & your soul!

as far as art style goes, go compare MK8's art style to how to train your dragon, brave, or kung fu panda, and you will realize just how much of a massive difference in quality there is, even though all go for the "cartoony" look. 

also frame rate isnt about visuals, its about performance. level design is about gameplay.
