Yeah, it's one of the most under-utilized consoles in terms of its graphical ability. 

At least we did get a few that actually tried to push it; Sonic Colours, Conduit 1 & 2, Metroid Prime 3, Metroid Other M, Jett Rocket, FAST Racing League, Mario Galaxy 1 & 2.

Conduit was one ugly looking game imo. I agree about Metroid Other M, some of the areas looked gorgeous, especially the outdoor one in a forest of some kinds with water running through. Metroid Prime 3 was my favorite looking game I think.  

Oh Conduit definitely left a lot to be desired in the art department, but on a purely technical level it was one of the most advanced Wii games, throwing around tons of effects like normal mapping, depth of field, bloom, projected texture lights, etc.
