There should still be plenty of the team left. Plus they only took the "young" members out.

 

1) Nintendo never supports their systems much in the year that the successor launches. Let's say that the new console releases 2017. You will see games in 2015 & 2016. We will get maybe 2 1st party Wii U games in 2017. Sure, it could be AC but since their are only 2, it might be unlikely. 

2) I think it's doubtful but not highly unlikely. If Nintendo can use that team to make something more profitable while making it as a core IP for HH's, they will.

3) Yeah, I guess you're right on that one. The AC team could've began development once New Leaf was released.
