If we're talking purely technological terms (art is down to personal preference) of pushing the hardware, I'd say Jett Rocket, Conduit 2, Metroid Other M, FAST Racing League, Modern Warfare 3 all push the Wii harder than Skyward Sword.

I do agree with your point though, that the Wii's most technically advanced games didn't emerge until it's 3rd, 4th, and 5th years on the market. The same will happen with Wii U, I expect.
