Nintendo's holiday 2015 is pretty much booked already to be honest, they have enough content for 2015 as is.
I don't think Nintendo was happy with Animal Crossing's sales on the Wii as well. It's a franchise better suited to a handheld.
Honestly it would be a stupid decision to make it for the Wii U rather than having it ready as a launch title for the 3DS successor. It's not going to really help the Wii U that much anyway.
I say 2016 for the next Animal Crossing and it will be for the next Nintendo portable (launch window).
Paper Mario U ... maybe 2016 for Wii U if it is a Wii U title.
