I have a feeling Animal Crossing is not going to happen on the Wii U, that will be a launch-window title for the next handheld as the sales potential is much higher for a portable version and they will need big games for their next launch (especially after learning some harsh lessons from this gen). Plus I believe a big chunk of the Splatoon team is the Animal Crossing team.
Paper Mario could go either way.
Wii U is going to get a Metroid U though, that should cover most of the main Nintendo IP offerings.
