Dolphin Shoals really catches my eye every time I play it. It's diverse in its course layout and my favorite part is when you pass the giant eel and pop out to dry land, and you hit that anti-gravity turn where the sunlight hits the screen and glistens off the damp ground... it's quite beautiful. ^_^
