Then if the preference of Nintendo fans is to go for the handheld, and they don't see a need in HD graphics/a home console, then doesn't that mean Nintendo is now out of the home console business and the WiiU was doomed from inception?

It wasn't predetermined, no. Nintendo did virtually everything in their power to push people away from Wii U. The fact that Nintendo games can still do well on it despite all their mistakes is a testament to just how beloved these franchises are.
