Of course an equivalent question would be: What would be the other consoles without their defining attribute.
PS3 - Blu-ray = Shorter games with very nice graphics
X360 - Online play = Individual FPS with very nice graphics
Wii - wiimote = a very cheap console, probably $149, that is still better than the previous generation. Just not by that much.
One of the obvious group that would go away would be the non-traditional gaming casuals. The older adults and the women who are attracted by the ease of playing a video game for fun. PS3 could have survived without Blu-Ray. X360 would be hard pressed but perhaps been okay without online (or not). I can't see Wii doing much better than Gamecube without the motion sensor.
Now strangely enough, Nintendo would have done better profit-wise than X360, because just like the Gamecube made money, so would have the Wii. Just way way less than now.
