F-Zero U honestly should be fairly easy to make.
Take the GCN F-Zero GX engine ... bump it up to 1080p (keep it at 60 fps) with new lighting effects like Wind Waker HD.
Add in most F-Zero GX tracks + a few tracks from F-Zero X on the new engine + maybe 1-3 new tracks.
Sell for $29.99 as an eShop exclusive with 16 tracks + online play + leaderboards. Add in new track packs down the line for say $7.99 a pop.
