I would like to say that I don't care about the art style. However, I'd be lying if I didn't say that Wind Waker's graphics style just really turned me off personally. It was also all the sailing, and the story to me just wasn't that compelling. If the story and overall game itself had been great (to me), I would have gotten over the graphics.
But I would really honestly like to see a Wii U Zelda with graphics somewhere on par or better as that E3 demo. I think Wii U is totally capable of delivering a massive, epic, great looking Zelda, and I hope they don't hold back.
