Twilight Princess had terrible and generic looking graphics due to a bad art direction. Realistic graphics would be incredibly boring too, it would really limit the game artistically, and I just do not seeing having a realistic looking Zelda game working at all.

Seemed like a natural evolution of Ocarina of TIme's style to me; similar color scheme, but with a higher level of detail, improved lighting, a a more lovecraftian creepiness to its monster designs. It was let down a tad by its low res textures, a legacy of Gamecube's small disc size, but it was still one of the best looking games of that system. (Though not one of the best on Wii)

I certainly wouldn't call it generic, as there aren't many games that have the the same style of creature design or lighting.
