Plastic shading, I have no idea of that either... but whatever.

If it's not using a plastic shader then it's probably toon shading like wind waker or borderlands.

KH never used cel shading, look at any screenshot from a KH game and then compare it to any screenshot from Windwaker, preferably a colorful one.

Maybe it's using some hybridizied model like the newer FF's ?
