It seems a little bit anticlimactic for Rhaegar and Lyanna's son to die from a sword through the chest from a steward and just stay dead.

It's not voodoo, it's a fairly well-explained magic mechanic drawn from Rh'llor. This is still a fantasy novel; I feel like the little touches of magic keep it from becoming (very interesting) historical fiction.
