Well that does open up the field pretty wide, but if I'm limited to one, then Urdnot Wrex. Despite being from a race of supposedly stupid brutes, he is highly intelligent, and unites all of the Krogan together into an excellent fighting force. He remains loyal to Shepard, and a good friend. There's really no reason to dislike him.
I actually personally prefer Garrus as a character, but there's no denying that Wrex is more impressive.
