Games that are build around very CPU centric consoles and then ported quickly to console with little weaker CPU and it's not surprise that they run little worse. Wii U still has more RAM and more modern GPU so Wii U can absolutely do better graphics than last gen consoles. There just isn't game yet to show it as Nintendo launch games are not that demanding graphically and third party games are quick ports.
