Even if the Wii U can run say Star Wars 1313 ... if all the versions are $60, who's going to pay $60 for the Wii U version that doesn't run at 1080p and is missing several graphical effects? The 720/PS4 versions are predictably going to sell better. Even as a Nintendo fan, when it comes to my own hard earned money, I'm not buying an inferior version of any game just to support Nintendo.

A lot of people were perfectly happy to buy 360/PS3 games that were inferior to their PC counterparts.

Plus, there's more to it than graphics; with the Wii there were games that were actually better on Wii than on PS360 despite having worse graphics, because the controls enhanced the gamplay. The touch screen has the potential to do the same.
